Barbecue sauce
In order to stick to and glaze the meat, a barbecue sauce usually contain at least one of the following:
- Soy sauce
- Sugar
- Honey
- Molasses
- Catsup
- High-fructose corn syrup (frequently found in commercial products)
To be considered here, a barbecue sauce must contain chile pepper in one form or another; typical forms are:
- chili powder
- curry powder
- ground cayenne
- or other dried and ground chile pepper
- a commercial or homemade hot sauce
- a commercial or homemade spice oil
Typically, a barbecue sauce will also contain some of the following (typical additional ingredients):
- garlic
- onion
- vinegar
- dried or prepared mustard
- fresh, pickled or dried and powdered ginger
- thickeners - corn starch, arrowroot, flour
- cumin
- turmeric
- coriander
- dried or fresh oregano
- dried or fresh thyme
- dried or fresh basil
- cilantro
- Szechuan pepper
