Spice Oil - essence of hot chile pepper
Use spice oils to spice up your life - Several drops of spice oil on a slice of pizza - Heaven.
It is easy to make spice oils. All you need is a blender and some patience.
Capsaicinoids and other flavinoids found in chile peppers are lipophilic (extract to oil very efficiently)
Our spice oils use dried and ground chile peppers
- chili powder
- curry powder
- ground cayenne
- or other dried and ground chile pepper
Spice oils should use a high quality vegetable oil:
- fragrant peanut oil (found in oriental markets - use for oriental style spice oils)
- extra virgin olive oil (use for everything else including Mexican)
- sunflower (use only if you want a brighter red)
- grapeseed (grapeseed spice oil has health benefits)
The dried chile peppers are usually toasted in a dry heavy cast iron skillet and then ground in a blender. Add oil and blend thoroughly. Decant into an airtight container. Shake the container long enough to resuspend the ground chile peppers at least once a day. Allow the spice oil to age for at least one week. Allow it to settle and then decant the spice oil into an airtight serving container (old olive bottles do nicely - but use clear ones - you want to see those lovely spice oil colors). But when you decant the spice oil into the container make sure that some of grounds go with. They'll help keep the spice oil from turning rancid.
Display your collection of homemade spice oils where they are visible but not in direct sunlight.
